Welcome to Good 2 Eat, sponsored by Supreme Rice, where every Thursday, 2une In will be cooking with Chef Kevin Belton to show you a new and delicious recipe to try at home!Mexican Picadillo4 Roma tomatoes, halved1 onion, diced2 garlic cloves 2 jalapentilde;o peppers, stems removed 2 tsp. kosher sa lt, divided, plus more as needed1 tsp. ground cumin1 tsp. ground corianderfrac12; tsp. oreganofrac12; cup beef stock 2 tsp. olive oil1 lb. ground beef1 Yukon Gold or russet potato, diced1 carrot, dicedfrac12; cup frozen peasIn a blender, combine the tomatoes, frac12; of the diced onion, stock, garlic, jalapentilde;o peppers, 1 teaspoon of the kosher salt, oregano, cumin, and coriander. Blend until completely smooth and set aside.Heat the oil in a large skillet or sauteacute; pan over medium-high heat. Add the remaining onion and cook for 5 minutes, stirring occasionally, until softened.Add the ground beef and sprinkle with the remaining kosher salt. Cook for 6-8 minutes, breaking up the meat into small pieces as it cooks. Drain and discard any excess grease if necessary.Stir in the potatoes and carrots and cook for 5 more minutes.Pour in the pureed tomato mixture and stir to combine. Reduce the heat to low, cover, and cook for 20 minutes.Uncover and cook for 5 more minutes. Stir in the frozen peas and cook uncovered for 5 more minutes, or until the potatoes and carrots are tender. If the meat starts to get dry, add in frac14; cup of extra stock and continue cooking. Taste and season with more salt as needed.Garnish picadillo with chopped cilantro and queso fresco if desired.
