Musubis are a traditional Hawaiian snack built to travel. Steamed rice is pressed into a nori-lined mold and wrapped to bundle the rice. Traditionally filled with grilled and glazed slices of Spam, here, the rice is topped with teriyaki glazed tofu for a vegetarian twist on the classic. And you don' t need a special musubi mold because you can rig one out of the tofu carton. Serve with sliced pineapple for dipping into the extra teriyaki pan sauce, or tuck a slice between the rice and the tofu for extra crunch and sweetness if you'd like. Assembled and cooled musubis can be wrapped in plastic wrap and refrigerated for up to two days.
