Gable, named in honor of the legendary actor and former pen thouse resident Clark Gable, is a stunning 82-seat love letter to Los Angeles’ multicultural palate and rich cinematic history. Rather than leaning into stuffy, traditional hotel dining, the vibe here is like a lively, eclectic dinner party. The dining room is lit by low pendant lighting, lush greenery and warm wood tabletops, all anchored by a crackling live-fire hearth adorned with dried herbs, ceramics and found objects. Snacks like tempura-fried maitake mushrooms with yuzu aioli and pizza-crust breadsticks served with a decadent Époisses puree are an ingenious intro to the menu. The wood-fired pizza program alone is a massive draw—particularly the 6th Wilshire, layered with bulgogi, red sauce and kimchi before the mozzarella is dramatically torched tableside. Standouts include Dirty Work, a clever dirty martini built on koji-washed vodka and aquavit and Shoots Ladders, a dazzling, fully clarified elote-inspired mezcal and Oaxacan rum creation poured over a single massive block of ice.
