The whole flounder at Siren.Photo by Andrew Thomas Lee Brookhaven continues to distinguish itself as a dining enclave, and in late August, the city will welcome a new eatery to the mix. Siren, a seafood-focused restaurant on Apple Valley Road, will become the latest offering from Word of Mouth Resta urants, the company that also owns Haven, Valenza, Vero, and Arnette’s Chop Shop. Company founder Michel Arnette originally intended to open a seafood spot in a windowless space tucked behind Arnette’s Chop Shop. Instead, in 2024, he opened the Associate, a private members’ club. Now, he’s back to the original plan, carving Siren into the club’s former dining room. “We thought, ‘Let’s recapture part of that space,’” Arnette says. Guests will enter through the steakhouse’s front door, and a host will walk them down a long, dimly lit hallway. He calls the speakeasy-style entry “a modern interpretation of a grotto” that opens into the new Siren dining room. Members of the Associate will retain a private space behind the new restaurant. Siren’s sultry dining room.Photo by Andrew Thomas Lee The Feel The restaurant’s name is a nod to the infamous sirens in Greek mythology, who are said to have hypnotized sailors with their sensual songs. According to Arnette, who also served as the restaurant’s designer, the Siren space is modern and “meant to have an alluring, sexy vibe.” Dark walls highlight pop art of female forms in the sea by Georgia-based, Croatian-born artist Pavlina Alea, while a dramatic cluster of Tom Dixon Melt pendants hang like clouds over the dining room. The bar sports a bubble feature that evokes an underwater environment. The dining room, which accommodates up to 90, is anchored by an open kitchen so that guests can observe a team of chefs at work. The Yellowedge Grouper at Siren.Photo by Andrew Thomas Lee The Food The seafood-forward menu is designed by two chefs who already work with Word of Mouth Restaurants: Stephen Herman of Arnette’s and Matt Swickerath of Valenza, who have also been named co-executive chefs of Siren. Guests can expect an abundance of in-season shellfish offerings on the raw bar, such as oysters, shrimp, lobster, and razor clams, plus an elegant caviar service. A selection of crudo-style dishes are primed to become signature appetizers, with coastal flavors from around the globe showcasing influences from the South as well as Latin and Mediterranean cultures. Rather than steakhouse-style a la carte ordering for mains, “we chose to compose how we wanted the fish featured,” Herman says. “We have chosen really simple, clean presentations that let the fish shine.” Many of the entrees—such as swordfish, scallops, and Georgia trout—will be cooked over oak and Japanese binchotan charcoal on a custom grill made by Grills by Demant, based in East Point. The Top Roe Martini at Siren.Photo by Andrew Thomas Lee The Drinks Sommelier Andrew LeClair leads the beverage program that includes craft cocktails and a globally-sourced wine list, with a focus on bright, sparkling sips. “We wanted it to pay a little tribute to the Champagne Bubble Bar,” says Arnette, referring to the nickname for the bar in the former Associate club, a title given to it because of the bubbly decor. As a result, guests will notice all manner of sparkling beverages, from sparkling wine and Champagne, to carbonated teas and zero-proof libations. “We’re excited to open,” Arnette says. “We feel like we have a bit of a trifecta [in this location]. We’ve got a great private club, an incredible steakhouse, and now a modern, upscale seafood restaurant.” Siren will be open for dinner Tuesday through Saturday from 5 to 10 p.m., with reservations available via OpenTable.
