Since 2024, Park City Community Foundation has been quietly building one of the most ambitious environmental commitments in our community’s history: eliminating and diverting all food waste from the Summit County landfill by 2030. It’s easy to overlook how big a deal that is. Food waste cur rently takes up close to half the space at our landfill and as it breaks down, it releases methane, a greenhouse gas far more potent than carbon dioxide.  Keeping it out of the landfill isn’t just a nice to have, it’s one of the most useful things we can do right here at home to combat climate change. Besides, by extending the life of the landfill by 10 years, taxpayers would avoid $60 million in waste transfer fees over those 10 years. More than 1,000 tons of food waste have already been diverted from the landfill since the initiative launched, with over 1,500 households and roughly 60 local restaurants and businesses now participating. This is Park City doing the unglamorous, essential work of building a more resilient community, one collection bin and one committed business at a time. Now the work is getting even more of a spotlight. The inaugural Chef’s Table Festival is bringing more than 70 of the world’s most celebrated chefs to Park City this month. Park City Community Foundation has partnered with the festival to extend zero food waste diversion to over half the participating restaurants throughout the event. It’s a chance to prove that world-class hospitality and sustainability values go hand in hand. We invite you to take part and help continue to grow food waste diversion in our community. On Friday, Aug. 14, Park City Community Foundation will host a fundraiser dinner at Alpinist featuring Chef Inés Páez Nin (Dominican Republic) and Chef Jaime Rodríguez (Colombia, Winner of The World’s 50 Best Restaurants’ 2025 Sustainable Restaurant Award), with wine from Redhawk Vineyards. Tickets include a wine pairing and a donation directly to Park City Community Foundation’s Zero Food Waste initiative.
