Servings: 1 serving Author: The Cheese Board in Reno Ingredients1 teaspoon butter for toasting3 to 4 fresh sage leaves2 slices brioche bread1 to 1.5 ounces of brie cheese sliced (rind on or off, your preference)1 ounce goat cheese softened1 to 2 teaspoons honey preferably local4 to 6 fresh blackberriesSmall pinch of flaky salt optional InstructionsHeat a small amount of butter or neutral oil in a pan over medium heat. Add sage leaves and fry for 10 to 15 seconds until crisp. Remove and set aside on a paper towel. Lightly butter one side of each slice of brioche. On the unbuttered side of one slice, add slices of Brie, spread goat cheese evenly, drizzle honey over top, scatter blackberries (lightly press a few so they release juice), and add crispy sage leaves. Finish with a tiny pinch of flaky salt, if desired. Top with the second slice of bread, buttered side facing up.Place sandwich in skillet over medium-low heat. Cook slowly for about 3 or 4 minutes per side, pressing gently, until bread is golden and crisp and cheese is fully melted and gooey. Let rest for 1 minute, then slice in half and serve.
