These days, an online review can make or break a business. Apparently, that is also true when a Dallas nine-year-old gave her review! Katherine Peel and her family went to a local La Madeleine restaurant in Dallas just off Lovers Lane. She enjoyed her experience, so she wrote a review. That revie w wasn’t published online; it was in her school’s newspaper at Providence Christian. Her dad was proud of her article and posted it on his LinkedIn page. Little did he know, it would get noticed by the company! The people at La Madeleine were so impressed that they invited Peel, her parents, and two sisters to get a behind-the-scenes “junior chef” experience. The girls started with custom aprons and berets, then toured the café with Chef Penny Shaheen, learning about pastries, bakery operations, and the kitchen. They made fresh fruit tarts while learning to pipe the filling. Then, Peel helped brainstorm ideas for the kids’ menu, folding crepes, mixing ingredients, and mashing avocado. Some of those ideas included: bring back the chicken pesto pasta, add a savory crepe (bacon, avocado, optional cheese), and introduce a croissant de grille (grilled chicken, pesto optional, avocado, optional cheese).
