Screenshot | Berlu Portland’s beloved Vietnamese bakery Berlu is bringing back its weekly Night Market-themed pop-up, officially starting next Thursday. The market, which is coming back for the first time since 2021, gives chef Vince Nguyen the chance to put his own spin on the street foo ds he’s enjoyed when traveling to Vietnam. It first made its debut during the COVID-19 pandemic as an outdoor dining option when choices were limited. For this rendition, they’ll upgrade things a bit, with dine-in seating as well as beer and cocktails. The food for the pop-up will largely be prepared on a charcoal grill. Bánh tráng nướng, or “Vietnamese pizza,” is back, with grilled rice paper serving as a “crust” for toppings like eggs, scallions, dried shrimp, pork, and chili sauce. They’ll also serve chạo tôm, which involves grilled, seasoned shrimp paste wrapped around sugarcane, as well as some vegan options, such as maitake mushrooms and fried tofu, each skewered and grilled. Some desserts will round out the offerings, highlighting ingredients like coconut, sticky rice, and banana. Cocktails will find fun ways to blend Vietnamese and Western influences: think an egg coffee-style espresso martini, for example, or a chanh muối, or preserved salted Meyer lemon, gin and tonic.
