While pancakes have been around for thousands of years, Elizabeth White and botanist Frederick Coville developed the first domesticated, high bush blueberry in the early 1900s. Blueberry pancakes followed. Blueberries (star berries) in the wild were used by Indigenous peoples for food and medicine. Blueberries lower blood pressure, reduce LDL cholesterol, and improve blood vessel function. And, these blue morsels can lower heart attack risk and enhance memory.
