The Goldener Hirsch debuts its revamped restaurant concept

Goldener Hirsch, Auberge Collection will debut a new restaurant, The Hirsch, on Dec. 15 following a renovation and culinary overhaul. The concept replaces the former Goldener Hirsch restaurant and will be led by newly appointed Executive Chef Jeff O’Neill.
The Hirsch draws from the design and
traditions of the original Goldener Hirsch chalet, incorporating European alpine influences throughout the updated space. Designer Liubasha Rose incorporated elements inspired by her childhood in Ukraine, including forest and mountain motifs. Renovations include a wood-paneled bar with a hand-painted ceiling and fireplace, as well as a dining room featuring Austrian-inspired details. A private dining room adds additional seating in a more enclosed setting.
The restaurant will open daily for breakfast from 7-10:30 a.m., lunch from 11 a.m.-2 p.m. and dinner from 5-9 p.m. The bar will operate from 11:30 a.m.-10 p.m. Monday through Friday and 10:30 a.m.-10 p.m. on weekends. Valet parking will be available.

The menu will retain long-standing Goldener Hirsch dishes — including cheese fondue, Wiener schnitzel and apple strudel — while adding new interpretations of Alpine cuisine under O’Neill’s direction, like raclette.
Highlighted dishes on the opening menu include dill-cured salmon loin with root vegetable beignets, butter-basted diver scallops with a toasted muesli galette, Mishima Ranch hanger steak with delicata squash and a cranberry-foie gras dumpling, and slow-cooked rabbit goulash with winter vegetables and egg noodles.
