Spike Gjerde, the chef behind several acclaimed Baltimore restaurants, will open a tapas bar in Mount Vernon in early 2026. Bar Dalí will be “a subterranean, neighborhood tapas bar inspired by Spain but rooted in Baltimore.” It will be located at 909 Charles St., the space formerly occu pied by Mount Vernon Stable Saloon until it became an event venue for Hotel Ulysses. Known for his work in restaurants such as Woodberry Tavern (formerly Woodberry Kitchen), Gjerde has teamed up with Ash Hotels, the company in charge of Hotel Ulysses next door, to open the new bar. The bar’s name is a tribute to Spanish surrealist artist Salvador Dalí. Bar Dalí’s Instagram page has not yet published any posts, but the account’s bio includes a quote by the 20th-century artist: “So little of what could happen does happen.” In 2015, Gjerde became the first Baltimore chef to win the James Beard Award for Best Chef in the Mid-Atlantic region.
